Premium Choice Gluten Free Buckwheat Granola
Ingredients:
1 cup of Premium Choice Buckwheat Kernels
1 cup of Premium Choice Almonds, chopped
½ cup Premium Choice Pumpkin Seeds
1 Tbsp. lemon juice
¼ cup of Premium Choice Sesame Seeds
¼ cup of Premium Choice Chia Seeds
½ cup of Premium Choice Dried Cranberries
2 tsp ground cinnamon
1 cup of raw honey
Method:
1. In a medium bowl add buckwheat, almonds, pumpkin seeds and lemon juice. Cover with water and place in the fridge overnight.
2. Preheat oven to 150°C
3. Drain the buckwheat mixture and rinse
4. In a large bowl, add sesame seeds, chia seeds, cranberries, cinnamon and honey. Then add the buckwheat mixture and mix together well
5. Spread evenly over 2 baking trays lined with non-stick baking paper
6. Bake, stirring occasionally for 45-50 minutes or until golden and crisp
7. Break into pieces and store in an airtight container
8. Serve by itself as a snack or with milk and berries
